It's been one week since I started my vegetarian experiment. How am I doing, you may ask?
Well, I did pretty well, but not perfectly. Like I said, I had some things already made that I needed to get rid of... so for this week, I probably give myself an 85%.
Disclaimer: I am allowing myself fish as part of my "vegetarianism", not because I actually believe that fish isn't meat, but because I'm not being completely strict about this diet and if I can have a little fish, in moderation, I won't crave the other meats as much.

I'm not going to bore you by documenting everything I ate, but I will give you the general idea of what i did right and where I went wrong.
Saturday
I didn't start this business until lunch, and I went to Panera... so I got the Cheddar Broccoli soup... in a bread bowl. So I did well on the veg, but not on the carbs. For dinner, my friend and I went to Applebee's. Do you know they have absolutely no vegetarian options anymore? They used to have a Veggie Patch Pizza, which I really liked but it's since off the menu. I went with a shrimp and rice dish.
Sunday
I ended up sick on Sunday, so I wasn't even that hungry to begin with. I did manage to have some scrambled eggs with cheese, coffee and orange juice, once I felt a little better. I didn't eat lunch because I took some NiQuil and ended up sleeping from about 11:00 until 3:30. For dinner, I did have some chili with ground meat at my parent's house, so that was a fail on the vegetarian end. I also went a little overboard on the sweets today. Not horribly, but enough that I felt it was a fail.
Monday
I had off Monday for MLK Jr. Day and I also did perfectly on the veggie thing.
I enjoyed a day with my momma, and spent way too much money... ugh. Annnnywho...
I had vegetarian "sausage" with my eggs for breakfast, and had a Vegetarian Sandwich at Rachel's Roadhouse. It was reeeeally good and I'd eat it again even if I wasn't foregoing meat.
I made a Beet Burger from this website. It's actually vegan, but who cares. Making your own veggie burgers at home is challenging. I've tried it before and they never really work out. However, after chopping these down to smaller patties and putting them under the broiler instead of pan searing them, they came out well and I'd eat them again, with a little tweaking on the ingredients.

Tuesday
Breakfast: Chobani Raspberry yogurt and coffee with chocolate almond milk
Lunch: a veggie wrap with Levash (low-carb) bread
Dinner: Shrimp & Lentil Soup...yes, I ate lentils. They are not my favorite thing, but mixed with other stuff, I can force it down. This day was a win!

Wednesday
Oh, here's where things start to slide a little. I went to my parents' for dinner and my mom made stuffed shells with meat sauce for dinner. I ate it. I liked it. :-) Still a fail.

Thursday
Today was a major fail because I made a conscious decision to eat meat. The meat sauce the day before could not really be helped, and I said in the beginning that if someone made me something with meat, I was not going to turn it down. However, today, I got Chinese for lunch and I just love the chicken that comes with the fried rice... so I got that. Sigh. No other meat the rest of the day, though.

Friday
Breakfast and lunch were perfect. Also, no snacking except for some strawberry/banana Chobani yogurt for a mid-morning snack. I actually really liked this flavor, and I was skeptical.
Dinner, on the other hand, was a fail. Pork chops. Well, 1 pork chop. The rest was veggies and starch.
So, all in all, I'd say I ate pretty healthy this week, if not completely vegetarian. I think the thing that is really going to help with the weight loss is, big surprise, less carbs and getting back to exercise. The vegetarian this is going to be less for weight loss and more for overall health. Even though I know I won't always stick to it, being conscious of trying to make most of my meals very veggie-centric is going to help me to become an overall healthier person. I may end up making this a lifestyle... we'll see.

I think you are doing very well. Taking meat out of your diet is very hard.
